Brown Sugar Blondies – Baked Perfection – made these for our postponed Valentine’s Dinner dessert and ho-lee cow, it’s delicious

On the menu for this week:

Baked Chicken Taquitos – Very Culinary, already had these, they are great

Asian Turkey Lettuce Wraps – Damn Delicious

Chicken Parmesan Dippers – Reservation for Two, must serve with marinara

Chicken Dish – Source Unknown – Spray a pan, green beans on one side, red potatoes on the other, chicken breasts in the middle.  Pour a little melted butter over the top and a packet of italian seasoning (by the ranch seasoning at the store).  Cover with foil and cook at 350 degrees for 1 hour.

Grilled Cheese and Tomato Soup – doesn’t get old when it’s freezing outside!

Egg & Cheese Bagels – half of a toasted bagel, slice of cheese, over easy egg on top

For the Super Bowl:

Skinny Poolside Dip – Home Trends Utah, serving with wheat thins and celery

To bring in the new year I tried to have mostly healthy meals for this week, especially after all the Christmas festivities and junk food.  Here is what was on the list:

Chicken and Lime Soup from Shellie Woodward Ideas.  Super yummy and not difficult to make.

Quick and Easy Taco Soup from That Little Spark.  If you have a can-opener this recipe doesn’t get any easier.

Crockpot Hawaiian BBQ Chicken from Six Sisters’ Stuff.  This one is sure to make your house smell yummy.  We put it over rice.


We have leftovers with all these meals, so that’s a plus.  A couple others we made:

Grilled Cheese and Tomato Soup (it’s basically a staple when it’s cold outside)

Progresso Santa Fe Chicken Soup

Scrambled Egg Toast Sandwiches

We pair all of these with applesauce or canned/whole fruit.

And of course I had to make some cookies.  So I chose these delicious Chocolate Chunk Oatmeal Cookies from Parent Pretty.  The thought process was that because they had oatmeal in them they were somewhat healthy (not true).
